This one is a riff on our Salmon Crunch Bowls, but with tofu! Modeled after a sushi crunch roll, the best part is showering it all with crunchy bits of fried onion and a spicy mayo drizzle. It’s a deliciously healthy vegan dinner you can make with either our Baked Tofu or Crispy Tofu (you choose!).
OK, know this cousin of tofu is a little under the radar. But when we tested it on friends and family, they loved it! And we couldn’t stop sneaking bites of this one.
Interesting note on tempeh: it has a load of plant-based protein: double the protein of tofu! It also has fiber, which tofu does not.
Marinating tempeh gives it bold savory flavor when cooked up with soy sauce, maple syrup, ginger and garlic. Give it a quick sear in a pan and it tastes deliciously meaty, great for serving with rice and broccoli, or in a bowl meal.

Got a ripe banana on hand? Let’s make banana waffles! Whisk it up into a fruity batter spiced with cinnamon, then cook in a waffle maker until golden and crisp. These waffles are absolutely delicious, perfect topped with a drizzle of maple syrup, a few banana slices and a dollop of peanut butter.
