Happy 2024! Hope you had a wonderful start to this new—and beautifully even-numbered—year. We drank espresso martinis and made French toast casserole for brunch (which just might become a new tradition!).
For January we’ve decided to embrace #Veganuary, aka eating plant-based / vegan for the month. That means we’ve got all new vegan recipes coming at you each week! Cozy, healthy, and perfect to start the year! It’s similar to a broccoli cheddar soup but totally plant-based, made with simple wholesome ingredients.
Cooking dry beans is something we used to do often, but we’ve fallen out of practice lately. So we’re resolved to get back on the train! It’s a simple and economical way to make a deliciously healthy side dish or main, and it comes out irresistibly creamy and smoky spiced. Plus, it’s totally plant-based!
For a main dish, add rice and a salad (and a few shakes of hot sauce, if you’re us!).
