Summer produce is going wild! We hope you’re enjoying the season as much as we are. Here’s the lineup for this week, as well as an announcement on an interesting (and exciting!) change to our recipes…keep reading!
Sonja and Alex
Corn Chowder or Chicken Corn Chowder
The best way to use seasonal corn! We recently announced that we have started eating chicken (more on that below!), so we’ve got several options for you here depending on your diet! Each one is creamy and cozy, with beautiful pops of golden sweet corn. Also try Vegan Corn Chowder for a fully plant-based spin (our personal favorite).
Chocolate Chip Zucchini Bread or Zucchini Muffins
We got more zucchini at the market…so had to make more zucchini recipes! This zucchini bread is so moist and delicious, with chocolate chips in every bite. Then we turned around and made it into chocolate chip zucchini muffins, which were even quicker to bake up. You choose!
This colorful, tasty and healthy side dish is perfect for the season! Sweet bell peppers need only a few ingredients to make them shine. Combine them with a tangy vinaigrette of white wine vinegar, Dijon mustard, and olive oil, then throw in a few handfuls of chopped herbs like parsley and chives.
We made this the other day and it was SO good we couldn’t stop sneaking bites! Pan fry fresh corn in a skillet with butter, garlic, and smoked paprika, and it comes out sweet, buttery and smoky. You’ll be amazed how just a few ingredients and 5 minutes transform corn into pure gold.
Expanding our options to…chicken recipes!
On social media we recently announced that we’ve started sharing recipe posts with chicken! If you've been around here for a while, you'll know we started this website as a vegetarian and vegan resource. However, we've gradually evolved how we eat to include some seafood, which we've been sharing on the website for the last few years. While we still eat mainly vegetarian, we have recently started including some chicken in our diet (pregnancy started this for Sonja, ha!).
We as people have evolved from focusing on plant-based eating to simply embracing the joy of home cooked, fresh and delicious meals (still heavy on the veggies!). So we have made the decision that our brand should reflect this too. We'll share chicken recipes every now and then, but continue to focus on plant-forward eating.
(Check out all our vegetarian recipes and vegan recipes over on the website, too. Or our top favorites, these 45 Easy Vegan Recipes and 40 Easy Vegetarian Recipes.)
So very excited to have chicken recipes now being included! As a person allergic to all shell fish and crustaceans and a non-lover of fish, this makes me happy to read in the weekly newsletter. I realize that chicken can be substituted in a lot of the animal protein recipes, but I am not creative at all when it comes to recipes. I need it spelled out for me. Lol!
Lastly, am I understanding correctly that Sonja is pregnant? Congratulations if that is the case! 🐣🧸🍼 🎉
