Hello friends,
It’s an epic week of new recipes over here! This manicotti pasta bake doesn’t even require boiling, the 15-minute chicken is a total game changer, and the salad is one of our top faves right now. Oh, and those pancakes are so ridiculously moist and fluffy, we kept exclaiming, “Why are these so good?”
On the personal side, February has been good to us. We recently escaped to Cancun on business (here are video highlights!). And, our son Larson turned 7 and we made him a dark chocolate cookie dough basketball cake. Cheers and thanks to those of you who have been here supporting us since his birth!
Hope you find something to cook this week! xo Sonja and Alex
There’s something so irresistible about pasta tubes filled with three cheeses and bathed in garlicky, tangy tomato sauce. This recipe is truly the easiest way to make manicotti: you don’t even have to boil pasta! Fill it dry, then pop them in the oven so you can enjoy all the creamy cheese and savory filling without the fuss.
Here’s a trick every home cook should know: how to make blackened chicken! This magic makes ordinary chicken breasts into flavor powerhouses with a smoky depth and a hint of heat. It’s great with rice, on a sandwich, or cut into strips to top a salad or tacos (those tacos will be coming soon!).
Move over kale: there’s a new salad green in town (or, a new purple?). As cookbook authors who’ve made over 60 salad recipes, it’s hard to impress us with something new. But this radicchio salad is a vibrant explosion of flavors and textures that will send your tastebuds into overdrive! It’s a new fave over here.
Ok these sweet potato pancakes are so fluffy, moist and flavorful, they’ve moved to the top of our favorites list! This recipe is the ultimate way to transform leftover sweet potatoes into a satisfying breakfast. Or, boil up a sweet potato just to make these (it’s quick and simple).
